The reason why you divide by one more, is because the manager and cash person receives an extra 1/2 of share each.  They have to arrive early, stay later and handle issues.
Here is an example that shows the process of determining the per person payout for each event.  Center Plate pays out 10% or 40$ per person, whichever is greater.  Keep in mind that if an event pays out 40$ per person, the same process explained below is followed.  If we had a minimum wage event and 11 people worked, each person would receive $31.88 with the cash person and manager receiving $47.82.
